Chaga Thai Iced Tea

Whether you’ve had Thai Iced Tea before or not, this recipe is one you HAVE TO TRY! Thai iced tea is a dessert-type beverage (but I’ll drink it any time!) that pairs very well with spicy food. It’s creamy, sweet and everything you need to soothe the palate or just to have a restorative treat!

I did have some trial and error with this recipe - at the very last step. While most Thai tea calls for half and half, I had seen some made with coconut milk, and I figured, why not! Well, I’ll tell you why not… it curdles! At least in this particular recipe it does. So I poured out my spoiled, thick, gross batch and redid it with half and half. After my initial failure, I was a bit worried about how this recipe would turn out overall. Once I tried the half and half version, I KNEW we had a winner. This Chaga Thai Iced Tea might be my favorite chaga-infused recipe that we have here at Birch Boys! I was so filled with passion to share this recipe that I hopped on camera - looking quite disheveled from an oddly-hot-and-humid day in New York - to tell our instagram followers about how good it is. Point being: you’ll be just as stoked to share this recipe as I was!

If you’ve tried Thai Iced Tea from a Thai food restaurant, you’ll be surprised by just how close this is! Due to the fresh brewing and herbs, it is a bit more nuanced in flavor than some I’ve tried from mixes. One thing it lacks however is the bright yellow color (normally imparted by yellow food coloring in the mix). If you want a slightly brighter beverage, try adding a ½ tsp of turmeric. It will give the Chaga Thai tea a bit of a kick, and perhaps impart some golden hues. Why not bright yellow? It would be tough for turmeric to overpower the potent fungal melanin from the ChagaNOW.

Ingredients

  • 4 cups of water
  • 4 scoops Birch Boys ChagaNOW (You can also substitute this by replacing the 4 cups of water with 4 cups of brewed chaga tea)

  • 4 bags of Organic Black Tea

  • ¾ cup of sugar

  • 2 Anise Stars

  • 2 whole cloves

  • 12 cardamom seeds

  • Half and half - You’ll add this to taste, and everyone has different preferences, so have a decent amount of half and half on hand.

Instructions

  • 1. Bring 4 cups of water to a boil

  • 2. Add black tea bags, anise stars, cloves, cardamom seeds, ChagaNOW and sugar.

  • 3. Stir until the sugar is dissolved

  • 4. Boil for 3 minutes

  • 5. Remove from heat, cover and let steep for 2 hours.

  • 6. Remove the tea bags and herbs.

  • 7. Fill a glass ½-¾ full of your tea, add half and half to taste and enjoy!
